, пищевой продукт, получаемый свертыванием молока и дальнейшей обработкой полученного сгустка. содержит белки (15-27%), жиры (20-32%, в сухом веществе - до 55%), минеральные вещества, витамины а и в. энергетическая ценность 100 г сыра до 1,61 мдж (400 ккал). известно ок. 700 видов сыра. по способу свертывания молока различают сыры сычужные и кисломолочные, по способу выработки - твердые, мягкие и рассольные. плавленые сыры получают плавлением натурального сыра при температуре 75-80 °с с использованием солей-плавителей.
