- A gland which lies across the back of the body between the kidneys. see illustration at digestive system in supplement comment: the pancreas has two functions: the first is to secrete the pancreatic juice which goes into the duodenum and digests proteins and carbohydrates; the second function is to produce the hormone insulin which regulates the use of sugar by the body. this hormone is secreted into the bloodstream by the islets of langerhans which are in the pancreas.
